Analysis:
The food was organic and none of it was processed. Since the food was organic my body should fair well with the ingredients in the chicken. There is some fat in the chicken, not much though, so my body should be able to burn off the fat. If I were to eat this everyday a health issue could be high cholesterol and I could become fat. My rice came from Wisconsin or some western state so that is pretty far. I'm not sure where the chicken came from but the rice was also organically grown. The environmental impact would be the flight from there to here. The chicken was about 10 dollars. However in comparison to a McDonalds chicken sandwich that is great. A chicken sandwich at McDonalds cost around 6 - 7 dollars. This was enough chicken for 4 sandwiches. This was chicken from Trader Joes, I don’t think I can get a chicken, maintain and grow him to eventually eat him. So socially I don’t think there would be any ramifications because I don’t believe the chickens were abused and mistreated, however even if it was, most of society doesn’t care about who did what with the chicken, they just care about the fact they are eating it


What I learned:


I have learned a fair amount from this food course I seen most of the movie we've watched so I didn't see anything really new, however I did discover some new things or paid more attention to things that I haven't done so in the past. One of the larger problems I believe is the dominance of the food industry and how they effective they are within the government. Government isn't supposed to have industrial interest because they are the government. So seeing how many government officials has something to do with food or other things like that it kind of put me on edge and question the actual stability and how corrupt is our government in reality. SO one of the things I think I can actually do would be to actually change the way I eat. For a while I cut down on beef and other meats, however in the house that I am in now it would prove to be difficult because I come from a family of meat eaters. Not to mention that my favorite food is a nice old fashioned cheeseburger. However anything is possible and I wouldn't say I couldn't but it would be hard, but I am willing. At least until they stop feeding fish corn, I would feel a lot better if they stop feeding fish corn and take the cows out of the cow concentration camps.

Pasta Salad Recipe: 

 

1 Can of Diced Tomatoes

¾ Bottle of Fat Free Italian Dressing

A Pinch of Salad Supreme McCormick Seasoning

Hodgson Mill 100% Wheat Noodles

A Teaspoon of Butter

Instructions:

 

Boil a pot of water and place the teaspoon of butter in the boiling water. This is also the time where you add your salt and pepper (optional).

Break the uncooked noodles in half and place them in the pot.

After 5-8 minutes strain the water out of the pot so the noodles don’t overcook in the bowl.

Open the can of diced tomatoes and empty the can in the bowl.

Pour ¾ of the Italian dressing into the bowl and add the pinch of seasoning.

Enjoy !!!

Analysis:

         For my recipe I mostly used foods that weren’t processed. For the healthier ingredients I used wheat noodles, a natural spread for my butter and McCormick seasoning and the processed foods were the diced tomatoes and the Italian dressing.  My complete recipe was around 550 calories in total. I believe that per serving size this dish was not unhealthy but it isn’t something I would recommend people eat everyday. If this were a daily meal you would probably have high blood pressure from all the sodium.

 

            Everything was made in America but most of the things weren’t locally grown. I think out of all my foods either the canned diced tomatoes or the salad dressing traveled the farthest. But there isn’t a very effective way to figure out how far everything came from.  This meal costs around $8 dollars because I purchased everything from fresh grocers where things are a little more expensive than at a store like Wal-Mart or Shop Rite. Even with that being said I still think this meal is cheaper than fast food because it can be refrigerated and because of the amount that was made it will also last longer than a $5 burger from a fast food place.

           

            If I were to grow the tomatoes myself as apposed to purchasing them to me the biggest differences would actually be that they weren’t store bought and also that there would . I don’t think the impact on the community would even be that great because there are local farms that grow tomatoes. Another major difference I’m seeing is that I don’t actually know how to grow tomatoes or keep the bug and insects away form them like an actual farm would so overall I think it’s a healthier decision to farm.

 

Personal Reflection:

            In this quarter we have talked about food for the last three weeks and I can honestly say I’m shocked. I always knew the food industry and the things we eat aren’t exactly up to par and periodical but after re-watching the movie Food Inc. I don’t really know what to think. In the movie there was a chapter about cleaning beef. This chapter was confusing to me. This piece talks about how beef needs to be cleaned before serving because it’s harmful but at the same time what they use to clean the food is just as harmful.

This unit has taught me that eating healthy is more than just a life style it’s a job. You need to know what you eat, where it comes form and the truth about how it’s made. I always thought people that lived a healthy eating lifestyle took it too serious, but after hearing the little boy Kevin’s story I understand. If you don’t watch out for your food no one else will even when it’s his or her job to. Also I never thought it was worth spending the money but I know now that if you don’t pay for it now you’ll pay later in the medical expenses and everything else. I feel that I’ve learned a lot, and have shaped the view eating healthy.

​Personal Reflection 
What I have learned during this unit was on one of my favorite topics in the world, Food. Well, what about food you might ask. Hm, well the food industry and their secrets of processing what we consume. From watching a food documentary, it honestly helped me realize a handful of suggestion that I should take responsibility of in my life and others. Watching a food documentary called Food Inc. had brought lots of questions in mind that I want to ask. I was in shocked how livestock were being treated before they entered the slaughterhouse and even how they slaughtered the animals. It was pretty harsh and I got kind of disturbed but still watch anyways because it does not seem realistic to me that they do such torture to animals. The biggest problem I see here is how food industry have no care about consumers health and that what they do in factories can harm everyone. Food system obviously know this but I'm getting bothered that they are ignoring this important fact and rather be selfish for money. Even I did not know what the food industry does before they shipped foods out to supermarkets until this video had been shown. Now, Im the type of person that likes more than one source about an issue but this had shown more that enough for me. Some changes I would want to make to your food choices is to chill out with the greasy foods and just be cautious of what I consume. Now, I don't want to say I'm going to try and eat organic food now because truly that's not in my path. Yeah, I consume organic products from left to right but I truly and honestly believe that I will end up going back to what I like which is unhealthy food due to the taste but be more cautious! Ah, you see where I'm going at with this. I enjoy food but learning so much of what's going on with what I enjoy makes me more cautious and that's all I can really be thankful for. I care about my health and everyone elses, I'll make sure to make this happen. 
​Sauteed Chicken & Ginger Dish

This is one of our favorite dishes that I have grown up to enjoy in my family. This is a simple delicious dish that does not contain much ingredients. It’s 5 ingredients or less to fix up an asian dish like this.


Materials:
Utensils:
-sharp Knife
-cutting board
-sauce pan
-peeler

Ingredients:
-3 whole gingers (unpeeled)
-2lbs of Boneless skinless chicken (serves 8-10 people)
-1 to 2 whole cloves of garlic(freshly chopped)
-1tlsp of Canola oil
-2table spoon of oyster sauce

Preparation(30mins):
1. You have the chose to either use your peeler to peel the skin off the ginger or if you are skillful enough, you may use your knife.

Tips: Whole gingers have an odd shape, so what I like to do is cut it in pieces where it’s manageable to hold and peel off the skin.

2. Once the skins are peeled off, face the ginger flat(If needed, slice the bottom to have a flat surface) and cut paper thin slices vertically. Do this to all of your ginger pieces. After cutting your slices, you want to cut them in strips.

Tips: Since you have cut paper thin slices of ginger, to make your process move a little faster, you may place a couple of slices on top of another and cut thin strips. Your ginger strips should be no longer than your pinky finger.

When handling with any type of meat, you want to wash your hands before and after thoroughly.

3. Place your boneless chicken breast on the cutting board. Using your knife, cut not to thick strips of chicken then slice them in either halves. Save as the size of your pinky finger in length.

Tips: Your chicken strips should be thicker than your ginger strips but the same length.

4. Mince your 2 cloves of garlic with a few of the ginger strips.

Cooking(5-10mins)
5. In a sauce pan, place 1tlsp. of Canola oil when it’s at least heated added with 1tsp. of white sugar. Once the sugar is slightly caramelized(Light brown), place the minced ginger and garlic into the pan.

Tips: When you hear sizzling, you’re doing something right! Don’t burn your minced ingredients.

6. Immediately, throw in your meat. Slightly sprinkle salt and black pepper so flavor your meat. Once the chicken is cooked, you add in the 2 table spoon of oyster sauce. You may leave this ingredient out if you chose too. It just provides extra flavoring into the dish.

7. Once this is all marinaded evenly onto the chicken, add in your ginger strips and stir for about 10-15secs.

Tips: You want to add in your ginger strips at the end of your cooking to leave a fresh zesty taste.  If they are soft, you have no texture that would compliment your meat. Serve with white rice.

Extra Recipe:
Recipe

Ginger roots
sugar
liquid lime
water

Need

Need a clean filter cloth
1 bowl

Directions

1. Wash off the ginger roots and cut them up into slices. (Small enough to chop smoothly in a blender).

2. Blend the ginger roots in a blender.

3. Take the blended ginger roots and pour it through the filter into the bowl.

4. Add any amount of water on the ginger while its in the filter. (Squeeze the filter so the ginger juice can come out)

5. Repeat #4 until the ginger has no more juice comes out the filter.

6. Add a half a bottle of lime juice and mix.

7. Add the amount of sugar you want and mix until its at the taste you want.

(Lime and sugar depends on the amount of juice you have.)



Analysis: 

I enjoy consuming this dish and how it compliments each other; both the lightly sauteed chicken and the taste of the zesty spicy ginger. It’s savory but being informative of what you use is even more interesting. This meal does contain processed and whole food ingredients. Canola oil and oyster sauce are processed ingredients where oyster sauce brand that I use is from Malaysia and the Canola oil I used is Wesson which is soy-based. Pure Wesson company is profiled in Suffolk, VA. Our other ingredients used in the meal is boneless chicken breast, ginger, and garlic. Tyson boneless chicken breast is what I used and they brand themselves as “100% All Natural Chicken Breasts that are a great option for a tasty yet healthy meal that is minimally processed and contain no artificial ingredients.” There are different types of major garlic and where it originated from. The garlic preferably used in this dish is an Italian garlic PDO(Aglio Bianco Polesano)  which is a heirloom variety from the northwestern part of the US. Ginger is grown worldwide and used in many different ways in other countries. I believed my ginger that I’ve used is imported from Asia because I brought my ginger from an Asian market. In Asian dishes, its used as a savory ingredient for it’s spicy, zesty taste and ginger has many health benefits that can relieve sickness etc. The main ingredients which were the ginger and chicken only came up to under 10$. If you did not process the other ingredients such as Canola oil or Oyster sauce, it would cost you another 10$.

Nailah Adam: Whole Wheat Pasta Salad

Nailah's Whole Wheat Pasta Salad​

Ingredients

 

2 packs of whole-wheat pasta

3 cups of grape tomatoes

1 cucumber

1 ½ bottles of Balsamic Vinegar

2 cups of Olive Oil

 

How-To

  1. Boil Pasta
  2. Chop cucumbers into dime size triangles
  3. Cut tomatoes into halves
  4. After Pasta is boiled, Drain
  5. Add all Ingredients into a large bowl
  6. Add 1 ½ bottles of Balsamic Vinegar and 2 cups of Olive Oil into mixture
  7. Mix
  8. Refrigerate overnight and Serve!

 

Analysis

            Pasta salad is one of the healthiest meals that is entirely organic and a part of the Whole Food category. Pasta salad can be served as a side or a meal. According to the nutritional facts of all the ingredients, two-three cups of pasta salad totals to a minor four hundred calories. Not only is it nutritional, but fulfilling. The carbs, or pasta, in the pasta salad serves as two of our six daily grains/per day needed for our body to function healthily. Carbohydrates provide energy throughout the day and help your metabolism speed up. The vegetables used in the pasta salad are used to fulfill some of your daily servings of vegetables and fruits. Vegetables are needed in a daily diet because it provides cardiovascular health, gastrointestinal health, strong vision, and other life long advantages. However, some health issues that could arise if you ate nothing but pasta salad everyday are hair/skin effects, lack of growth of muscles and blood and hormonal disorders, that are caused by lack of enough proteins in diet.

            My ingredients come from the United States and Italy. The tomatoes and cucumber comes from Florida, while the olive oil, balsamic vinegar and pasta come from Italy. The olive oil, balsamic vinegar and pasta (all organically grown) have traveled the farthest at steep four-thousand-four-hundred-and-thirteen miles.

The cost of all the ingredients was ten dollars, for a serving of twenty. Compared to fast food, the average double cheese burger and French fries cost two dollars and fifty cents.; resulting to a total of fifty dollars for twenty people. Overall, you come out cheaper preparing pasta salad. The Food and Drug Administration regulate the food items used in pasta salad.

There are some social ramifications of preparing pasta salad. The price of a regular bag of pasta can cost about one dollar. However, the price of a whole-wheat organic pasta bag cost about one dollar and thirty-nine cents. While some may not see a big difference, a lot of people are always focusing on the bottom dollar, where that extra thirty-nine cents can go towards other needs. Tracing where the vegetables came from was not hard. The tomatoes and cucumber were harvest on a farm where they grew these crops. The whole-wheat pasta derived from the form of unleavened wheat dough of buckwheat flour. The balsamic dressing and oil came from a reduction of cooked white Trebbiano grape juice and olives. All of my ingredients are organic; therefore, there wasn’t a lot of processing. The ingredients were purchased from my local Supermarket, Brown’s ShopRite. Needless to say, Pasta salad can be categorized as one of the healthiest, tasteful and fulfilling meal.

Reflection

In this unit, I have learned a massive amount of information about the food industry, food itself and how I am a prime factor in it. What I found most intriguing while learning about the unit, was that I can contribute to the wrong doings of the industry by buying its products. Essentially, I learned that by supporting the non-organic food industry, I am supporting the mistreatment of animals, people's health and my health.

The biggest problem in our food system is the lack of organic food resources in urban areas for cheap prices. I believe the majority of the people who are malnutrition from non-organic food suffer because the lack of organic food resources in urban communities. In order to change the statistics and change the health of suffering citizens, we have to change our unhealthy diet to a healthy diet. In order to change the statistics, we have to change the resources.

A change I can make to my food choices is  taking out the fattening, greasy and sugary foods and replacing them with vegetables, healthy proteins, grains and fruits. The impact of these changes will be a longer, healthier life. I am willing to make these changes if the food industry agrees to cheapen the cost of organic food and increase organic food resources in my area particularly.

Chicken Parm - Blase Biello - Q1 BM

Chicken Parmigiana w/ Spaghetti in a Marinara Sauce


Time: About 1 hour                                           Chicken-Parmigiana-420x279

This is a dish that has been in my family for years and years. A truly Italian meal. -Blase

Ingredients: 
3 eggs
Fresh Romano/Parmesan cheese
Bread Crumbs - Italian Style
Chicken Breasts *
Canola/Vegetable oil (enough to fill pan 1/4 inch)
1 bottle of Pasta Sauce *
1 box of spaghetti *
Slices of mozzarella (or any cheese) *

*These quantities depend on how much you'd like to make. 

 

PREPARATION
1. Defrost the chicken breasts if frozen.

2. Crack 3 eggs into a bowl and stir until eggs are beaten. 

3. Pour a mixture of bread crumbs and romano/parmesan cheese onto another plate, a good amount. You can always pour more bread crumbs. 

4. Put the chicken breast in the egg, fully submerged. Leave it in for a couple seconds.

5. Put the chicken breast on the bread crumbs and flip until it is covered with bread crumbs. 

6. Set aside and finish all the pieces of chicken.

1. Heat 1/4 inch of canola oil in a pan/skillet on Medium-Low heat.

2. Before it is at a boil place the breaded chicken breasts in the pan. Not to many though, you don't want over-crowding. 

3. Let the chicken cook for at least 3 minutes on each side. Or until the side is golden brown.

4. Place the cooked chicken onto a paper towel and let dry.

MORE PREPARATION
1. After the chicken 'cutlets' have dried coat them with tomato sauce.

BAKING

1. Preheat oven on 400º F for a couple minutes

2. Put in the pieces of chicken and keep in the oven until the cheese has melted.

SPAGHETTI 
1. Bring a pot of water to a boil.

2. Put in fresh/boxed spaghetti and cook until spaghetti is soft - NOT TO SOFT.

Analysis 

I made Chicken Parmigiana with Spaghetti in Marinara Sauce, which took a total of 8 ingredients to make. A little over 60% of the meal is fresh whole food. While the other 40% is processed. However, even though the food is processed; it is not meat it is only the bread crumbs, canola oil, and marinara sauce - which are all fairly healthy. For every 2 pieces of chicken parmigiana there is a little over 500 calories and about 18 grams of fat. The body has a slightly difficult time processing any form of meat/poultry, so eat light. I'd definitely say eating chicken parmigiana every day would be very dangerous to someone's health because of the amount of cheese and fat that comes from the cooking process. The eggs that I used were from New Jersey as well as the chicken. The fresh cheese was made in Pennsylvania. The bread crumbs I used were actually from the same city as the eggs, Vineland, NJ - that's where the Progresso Quality Food plant is located. The fresh spaghetti was made in South Philadelphia. The farthese traveling ingredient was the pasta sauce, which was made by Barilla- who's plant is located in Avon, New York. In my opinion, these ingredients barely traveled any distance at all, and I consider this a "home cooked meal". Especially, that you can make the sauce yourself. When I bought all of the ingredients for this meal, it cost be a little over $20. This is more than you would pay for fast food BUT I was able to make 10 pieces of hefty chicken and 2 pounds of spaghetti, clearly showing which was more valuable. Both small and big companies made money off of my ingredient purchases including a small farm in Vineland, and a large company in Vineland, as well as other companies. In my opinion, there are little to no social ramifications of this meal, except maybe the usage of chicken. Most people do not like the way chicken is handled in the US, including myself, but this was not Tyson or any other huge company, it was a small farm in NJ. All of the ingredients of the dish were bought at the supermarket, ACME. With the eggs, simply buying fresh eggs at the store, is more efficient than having your own hens to lay the eggs in your Philadelphia backyard. Buying premade pasta sauce, in my family's eyes is definitely not the way to go. Making the pasta sauce at home, with a plethora of ingredients makes the sauce better and more customizable. Overall, this was a really successful dish, and one of my favorites, and I can definitely consider my chicken parmigiana with spaghetti in marinara sauce an affordable, home cooked meal yielding huge portions. 

Reflection

Regular Americans do not play a huge role in the larger food system. Actually, in my opinion, they play little to no role at all because bigger corporations within the food system like to do whatever they want, whenever they want, however they want. Behind every piece of food, whether it be a fruit, vegetable, swine, beef, processed food, etc. There’s always a corporation behind it reaping benefits somehow. A lot of the practices that these companies do, goes unnoticed to the everyday American, because a lot of the practices are kept from non-workers’ eyes. Any footage that you’ve come to see from within a slaughterhouse “kill floor” or anything like that is all essentially ‘spy-footage’. These corporations like to keep the door shut to outsiders, leaving Americans to play a very small role in their own larger food system. 

I believe some of the biggest problems with our food system are corruption, ignorance, and sanitation. For example, with corruption, many of the corporations know that what they are doing is no good for people, animals, or the environment but they continue to do it regardless. Also, many of the big food corporations’ Presidents and CEO’s have spots on the FDA and other government positions. Even though, they continue to keep a blind eye to all the unsafe and unsanitary conditions that are present. With ignorance, there is a huge problem here. Many of the Americans have no idea what is in their food or how their food is processed. In fact, I think over half of the Americans would actually take at least one thing out of their diet if they got a look at behind the scenes of America’s food system. Ignorance like this can be combatted through learning through various pieces of media. Including the film we watched in class, Food Inc. Finally, sanitation. After watching Food Inc. I’ve seen some of the nastiest living conditions of our burgers, hotdogs, and chicken wings that I think could ever be possible. Cows and pigs living in their own manure, and chickens living in a dark room - keeling over from their own unhealthy weight. Everything is unsanitary and the FDA needs to do some major regulation. 

There are many changes that I could personally make to my diet to make my overall quality of life substantially higher. My dad is a vegetarian and doesn’t eat any meat. The proteins that you can get from eating meats, he gets through vitamins and other things like peanut butter, fish, etc. However, this is not a step I’d be willing to take. I love meat and I couldn’t imagine not eating it. In fact, I tried to stop eating meat for a week and failed. But, there is a solution. Go organic. The organic companies feed their cows grass and actually let them walk around in a grassy field, making the overall beef from the cows healthier, cleaner, and overall better. The impact of going organic would definitely make me feel better by cutting out unnecessary hormones, preservatives, and random bacteria would substantially make my health better. In fact, I’ve tried a pack of organic hamburgers and their meat is so much better than regular burgers, honestly! 

At the end of the day, I’ve learned so much about America’s food system and the many shady sides to it. Through educational documentaries about the food system and foods, I was able to make myself aware to all the dangers that are out there when eating processed foods and various forms of meats. Converting over to organic meats is definitely one of my main goals because that’s clean meat that wont do nearly as much harm to your body that regular slaughterhouse meat can. I’ve learned the tiny place that we, Americans, have in our food system, and I took the first step to a better lifestyle, which was educating myself and making changes accordingly.

In my family, as Italians.. I always had salad after my meal regardless of what we ate. Italians believe that the salad aids in digestion and is refreshing to eat after pasta/meat/etc. It seems wrong to have salad as an appetizer in my family.

Above is my Food Slide. 
Just recently i have tried Alligator & Loved it Which is where the Alligator graphic come from, and also the Food Rule "Don't Be Afraid to Try New Things". It's always great to branch out past the normal things you are used to.

For the Recipe I made Baked Chicken:

2lbs.- free range chicken thighs

3 -small organic red potatoes 

1/2-organic red onion 

1-cup of chicken broth

1-sweet Red bell pepper

1-clove of garlic

organic black pepper corns w/ grinder (Black pepper)

bottle of organic extra virgin olive oil

Reynolds Baking Bags

 

 

Prepare the chicken by sprinkling it with grinded black peppercorns

Sauteé 1/4 of the onion chopped, half the red pepper(with seeds), & chopped garlic in olive oil.

(while you are waitng you can slice your potatoes thinly.)

Once that in finshed and browned, prepare the skillet with more olive oil to fry the chicken. 

You plan on just browning the skin , not frying completely.

Once the skin is browned, you need to prepare your baking bag,put the baking bag inside of the roasting pan,  cover the bottom of the bag with potatoes then the slices of the other half of the onion and peppers. Add a layer of chicken to cover the bottom layer. each thigh should be touching a potato. 

sprinkle the sauteéd peppers and onions on top of the chicken. 

Put chicken broth on top of all the food in the bag using a turkey baster.

tie the bag and cut slits for air holes.

Put in a 375 degree oven for about 40 minutes. check periodically.

 

 

A few words to describe me meal:

  • tasty-of course!
  • economical & cheap-this only costed me about $15 (every ingredient was purchased from Whole Foods market)
  • filling- not only do you get a main course of chicken, but you have sides with potatoes, onions, and peppers
  • complete-as I said before, the meal is complete all you need is something to drink.

The body does not take long to digest chicken. Chicken is not a heavy meat. Peppers onions and garlic and tasty flavors which are rather healthy. If you ate nothing but this meal everyday you might lack calcium in your diet.

All the ingredients were local and organically grown. The chicken was also free range.





During this unit about Food in Science and Society, I have been a lot more open minded when it comes to food. In the Food Inc. movie we saw a lot of animal cruelty when it came to chcikcen and cows. Cows were often swung around by their limbs and no one really "cared" about the animal that was about to be slaughtered. Another thing I found interesteing was the fact that fish were being fed cord in order to "beef them up" so they would be worth more in the market. They did the same to cows, which would cause them to put a hole in the side of the cow in order to essentially extract the waste, and these helps the cow a little because cows with holes in them last longer. 

It was interesting in this unit to see everyones opinions with discussions and with their presentation of their portion of the movie. 

This unit essentially changed my view on many foods I eat. For example I eat beef a lot less, especially because it takes 7 days for it to digest inside you body. YUCK!

Samantha Boyd Challah Bread Q1 Benchmark

​Recipe

1  Bread machine 

1 cup of warm water

½ cup white sugar

1 table spoon

½ cup of vegetable oil

2 ½ teaspoon of salt

2 eggs

4 cups of bread flower

2 ¼ teaspoon yeast

 

After dough is made let dough rise on floured surface for 5 min

Divide dough in half and then in to thirds. Roll into ropes and then braid.

Place on greased cookie sheet cover with wrap and let it rise for 1 hour.

Preheat oven to 350 F.

In a small bawl beat 1 egg and 1 Tablespoon of water

Brush the egg mixture over the bread

Put into oven to bake for 20-25 mins.  

 Recipe analysis

This entire meal is all processed for the simple fact there is nothing healthy really in it and nothing used to make this is all whole food. ½ cup of sugar is not really good for your body. It’s really unhealthy expectedly for ones that live with diabetes. 2 ½ teaspoon of salt is extremely unhealthy for your body because of high blood pressure. This meal original from Israel. Challah is a loaf of yeast-risen egg bread that is traditionally eaten by Jews on Shabbat, on ceremonial occasions and during festival holidays. I truly beleve that these ingeatings to make this come from your local grocey story. Challah is not expnisve compared what you would by at a fast food place but I really do think that there is just as much bad food in it just as fast food. Challah cost $2.25 at the store or the juwish bakery. Stroehmann Family White 20 Oz Loaf of bread is $3.29, which has the same ingredients but is more expensive then Challah. So really baking Challah is really the cheapest way to go at the end of the day.


 Self Reflection 

 During this first quarter of science & society I have learned many thing when it come to the foods that we have in our world today. We started off talking about how children are becoming obesity because of the foods that they eat and the nutritious that they are not getting. We talk about what kind of food is held in different homes and what food places are close to eat from trying to understand why the obesity level is going up and not decreasing. 

 

         We started learning about how families need to look at the food labels before they buy their food from supermarkets. We talk about how hard it was to even get food companies to put the labels on their food and what laws were put in place for then to do so. So when it come to different food companies and how they raise and create a farm and animals on that farm we watched a movie called food inc. that allowed us to see what kind of goes on behind the sense of food. 

 

       While watching that movie we learned about how the animals were being tread and how they were being cared for. We learned about what they were feeding them and what if do to their body. They showed us what chemicals are being used to kill the germs that might be in the food. We learned about how e-coli got in to a hamburger and a young boy named Kevin died from it and then his mom tried to get a law passed about that called Kevin's law. We learned about Oprah and the case that happen with her we learned about the seeds and how they are expansive and they try to reuse then and can't. This movie talked about so many things it was crazy that it took us as student to really look at all the food that we by and eat differently. 

 

         After the movie and doing different class assignments with that we went on to learning about organic and non-organic foods and the difference and price between them. We as students had to go home and look in our homes to see what was organic and not the we were told to shop and see the different in price and label in organic and non -organic. Some students like my self brought the assignment home to the dinner table and talk about what we have been learning about food in class with our families. Next we started to look at different things that have to do with the body and food like, diabetes and heart disease and things like that and how they error form the foods that we eat and by.  So there are so many different things about food that we have been learning about.

Recipe and Analysis

​Boneless Garlic and Lemon Pepper Halal Chicken Sandwich

4-6 - Boneless Chicken Breast
1/4 cup oil (sunflower oil)
1 Tbsp -Garlic Powder
2 Tbsp - Butter or Margarine  
4 - 6 Hamburger or Hoagie Rolls

Get a few thin slices of chicken breasts.
On both sides of the chicken sprinkle good amount of garlic and let sit for 40 seconds.
Place the specified amount oil and butter in skillet.
Cook the oil and butter in skilled on medium heat until Hot.
Cook breast on both sides for a few minutes or alternatively until all the pink is gone from the meat leaving it entirely white inside.(To do this I cut little slits in the the chicken so I can see the inside of the meat.)

Place on buttered and toasted hamburger or hoagie rolls. Add any condiments you feel necessary.


Most of the meal is whole food because it is solely meat, spices and bread. The only processed part of the meal is butter and oils and you can just bake the chicken or not use butter for the bread. My body is just eating natural foods, it digests chicken, bread and butter just like any food. The worse thing here is butter but animal fat is much worse for arteries. Also 100% of the calories from the butter come from fat so add another problem but the butter I used has 0mg of cholesterol so take the good with the bad. Although butter is not as bad for your arteries it is still just bad and it will lead to many problems. The fried food is also bad for your health but it is still meat.

Most of my food is from America but the chicken is from Pennsylvania. The butter I would have to assume is the farthest because it doesn't have any designated place in America it just says from the U.S.A. The chicken is Halal, bread and butter is all commercially produced and grown.

As a meal it cost 4.50 per pound of halal chicken, 2.00 per bag of bread, 2.69 for the butter. Per sandwich it cost .78 cents. The food is regulated by FDA like most foods are in the U.S. The individual companies themselves made money off of my food and since most of the food is independent except for the butter which is from a bigger company, smaller companies made all the money off of the food I brought.

I don't see any ramifications for my food socially because halal meat is slaughtered traditionally and without all the social problems that lobbyists have with big companies. No one is angry about bread or butter as far as I am informed. For my meat it starts with the farm, slaughtered at the farm, packaged, to my home and on the plate.


Personal Reflection

My role in the larger food system is the same as it always was, the consumer. I am and will always be the consumer unless I take up a job as a farmer or regulator but my role as a consumer is the most important because the role is an ever changing one. The role can change radically because if me and 1000 friends come up and want something different and convince others that they want the same thing, something will change. One of the biggest problems is that everyone accepts this as it is and it is an insufficient amount people who legitimately want change and will continue to fight for it. In other words the biggest problem is the people who say "Yeah this is a travesty!" and do nothing about it. Yes I choose to say I support a corrupt and deteriorating system but at least I am honest and I don't say things like I will change it. In a market business the consumer is god and unless god TRULY wants change to an extreme extent nothing will happen.The only change I can see is not supporting this disgusting system of animal abuse and capitalism. This would be a giant change, a change so big that it would change the U.S economy and maybe even the U.S itself. This change would show the people who want nothing but money that the consumers want change and to eat healthy. If these people are motivated enough they can influence others to show our government that we want cleaner everything and that we will not respond until we get what we want. No I am not willing to make these changes because I am not motivated or moved enough to do anything. Even if I was motivated enough it would take a lot more to change things than one person it take about a million.


Food Rule

This rule is simple in nature with a an even simpler message. Do Not Over Eat. It is harmful and it leads to many harmful things later on in life such a high blood pressure and diabetes and with those numbers rising dramatically there is no need to add to that statistic.

Julia's Benchmark Q1

​Recipe and Analysis:

Eastern European food(Jewish)-Kasha Recipe 

Ingredients

1 egg

2 cups of veggie/chicken broth

1 tbsp. butter

1 cup of Buckwheat/ Kasha

Cumin

Janes Krazy mixed-up Seasonings (original)

 

Instructions

Step 1:  Get a large pot, pour in broth, mix in a tbsp. of butter and bring to a boil, .

 Step 2: Meanwhile, mix Kasha and egg together.

 Step 3: Put Kasha and egg mixture into a wok/ frying pan on medium heat.

 Step 4: Stir continuously (so that the kasha mixture will not stick to the pan or together), let the grains separate. Should look dry but not brown.

 Step 5: When broth comes to a boil, pour into wok/frying pan.

 Step 6: Stir and cover on medium heat for 30 minutes (check every 5-10 minutes to stir), let the Kasha absorb the broth.

 Step 7: When the Kasha has absorbed all of the broth, season to taste with mixed seasoning salt and cumin.

 

Analysis:

 This meal is an easy and healthy option for any family. It consists of two whole ingredients and two processed ingredients. As a staple food in Eastern Europe, kasha is filling and nutritious. It is 82% carbohydrates, 12% protein and 6% fats. Kasha is also a good source of dietary fiber and magnesium with 155 calories for 168 grams. The dietary fiber is the part of food that your body cannot process; therefore it acts as a regulator for your digestive system. Magnesium is important for numerous functions in your body: nerve impulse transmissions and formation of healthy bones. It’s safe to say that this food is nutritious. It is also an environmentally friendly dish.

             The buckwheat used was organic and the eggs were from free-range chickens. The store we purchased these items from look for local farms to buy from so the buckwheat groats and eggs didn’t travel far. The item that traveled the farthest was the vegetable broth that we used to be vegetarian. It was imported from Canada and creates a large carbon footprint, which is ironic and an example of the choices and priorities consumers have.

            The cost of a meal is a big deciding factor for consumers. This meal is fairly feasible. The entire bag of buckwheat costs only 3 dollars and this recipe calls for half of the bag. One organic egg costs 32 cents and the broth costs around 3 dollars. While the total is much more than a fast food meal, this is a pretty cheap meal considering that two of the items, if not more are organic.

            An important aspect of kasha is that most of these products can be produced through a self-sufficient process. Chickens can make the eggs and are easy to contain as livestock in backyards. Buckwheat is apparently easy to grow and can be used in numerous types of food. The only issue with the self-sufficient food process is the limited resources in certain urban areas. Ashley and I are fortunate to own houses with backyards, but many people live in apartments or row homes and cannot grow their own food. However, many of these items were purchased in Acme and were still labeled “organic” so this meal could still be accessible.

            Therefore, Kasha is a good food to know how to cook. It is nutritious, environmentally friendly and affordable. All of the items needed for kasha can be bought at grocery markets such as Acme or local stores or even grown at home. As a dish, kasha follows a lot of the food rules. It is less than 5 ingredients, it is something my grandmother would recognize as food, and it’s vegetarian and organic. All in all, it’s a great dish.



 Personal Reflection: 

When Science in Society first started talking about food, I was ignorant to my role as a consumer. It was only after watching Food Inc. and reading the informative articles that I began to see the error of my ways. I felt extremely guilty. Obesity rates are through the roof, people are buying the cheap and easy choices, and farmers are being exploited daily because of my choices in the grocery store. The entire empire of food seemed messed up.

However, as the class progressed, options began to appear on the horizon. I began to understand how buying food means a vote for that product. Also, I understand now that eating is a responsibility and consumers need to do research before they mindlessly buy everything. However, my work as an eater is unfinished. 

 Some changes I plan to make are to research the products I consume daily such as milk, yogurt, and cereals. I, also, plan to buy only local vegetables and fruits that are in season. Fortunately, the Weaver's Way co-op will make these goals easier to achieve. This store usually buys locally and even plants it's own food. I'm lucky that it's in my neighborhood. Lastly, I need to teach other people about the food industry. Even if nothing comes from it, they at least will be more aware than before.

Personal reflection 

What I have learned during this unit was on one of my favorite topics in the world, Food. Well, what about food you might ask. Hm, well the food industry and their secrets of processing what we consume. From watching a food documentary, it honestly helped me realize a handful of suggestion that I should take responsibility of in my life and others. 

Watching a food documentary called Food Inc. had brought lots of questions in mind that I want to ask. I was in shocked how livestock were being treated before they entered the slaughterhouse and even how they slaughtered the animals. It was pretty harsh and I got kind of disturbed but still watch anyways because it does not seem realistic to me that they do such torture to animals. The biggest problem I see here is how food industry have no care about consumers health and that what they do in factories can harm everyone. Food system obviously know this but I'm getting bothered that they are ignoring this important fact and rather be selfish for money. Even I did not know what the food industry does before they shipped foods out to supermarkets until this video had been shown. Now, Im the type of person that likes more than one source about an issue but this had shown more tha enough for me. 

Some changes I would want to make to your food choices is to chill out with the greasy foods and just be cautious of what I consume. Now, I don't want to say I'm going to try and eat organic food now because truly that's not in my path. Yeah, I consume organic products from left to right but I truly and honestly believe that I will end up going back to what I like which is unhealthy food due to the taste but be more cautious! Ah, you see where I'm going at with this. I enjoy food but learning so much of what's going on with what I enjoy makes me more cautious and that's all I can really be thankful for. I care about my health and everyone elses, I'll make sure to make this happen.
